Betty’s Kentucky Hot Brown Sandwich Recipe
In this video, Betty shares one of her best recipes–her version of the Kentucky Hot Brown Sandwich. The Kentucky Hot Brown Sandwich originated at the Brown Hotel in Louisville in the 1920′s. The recipe has evolved over the years, but is still a favorite among Kentuckians–and visitors to Kentucky, too! Ingredients: (for two open-faced sandwiches) 2 slices hearty white bread 2 or 3 tablespoons butter (for buttering the bread slices) 2 tablespoons butter (for the cheese sauce) 1/4 cup flour 1 1/2 cups milk 1/2 cup shredded cheddar cheese 1 cup grated Parmesan cheese 6 thin slices turkey breast 1 center-cut slice country ham 2 thin slices of a tomato that is large 4 crisp slices of bacon Spread both sides of the two pieces of bread, and then place them in a skillet large enough for both of them to lie flat. Brown the bread slices on both sides over low heat, watching constantly, so that the butter does not burn. Remove the browned bread slices to two individual small (bread-sized) oven-proof baking dishes. Now, make your cheese sauce. Melt 2 tablespoons butter in a saucepan and remove from heat. Add in 1/4 cup flour, and stir until blended. Add 1 1/2 cups milk, along with 1/2 cup shredded cheddar cheese and 1 cup of grated Parmesan cheese. Mix thoroughly, and return the saucepan to heat. I don’t own one either, but I’m planning to buy one now that I’ve taken over holiday meals for my family. I get little grease and pepper sauce spots on everything. . .and I’m not sloppy I Swear!

Hi Betty — guess what? I’m watching Food Network right now and on Bobby Flay’s Throwdown they’re doing a kentucky hot brown competition. You should definitely check the episode out sometime if you get a chance! It’s a great sandwich indeed =]

@Liakos256 Yes, you may refrigerate the cheese sauce. Just heat it over low heat, adding a little milk if it is a little stiff.

Just a little critique, you could benefit from some more lighting; though your instructions were very easy to follow and I could hear you loud and clear (loud and clear is rare).

I just had some, my grandmother was making this and I substituted the bread for 1/2 cup of rice. It is an awesome dish. Going to make some for my sister now.

I have a book called “American Sandwich, Great Eats from all 50 States”. Each state has a sandwich that represents it, the entry for Kentucky is the Hot Brown. Each sandwich includes it’s history, for the Hot Brown they describe it just as you said. To tell you the truth, I’m from Kentucky and I’ve never had one, but I’m making them tonight.

@XxBrandon98xX Yes, it is. I have another version that is the original Hot Brown from the Brown Hotel in Louisville, and it’s made with half-and-half. I would just suggest using skim milk and fat-reduced cheese, and put less of the sauce on top, and make skip the bacon or substitute a few Bacos.
