The first answerer had it right. Also, the bigger the negative number (like -500) the bigger the favorite. It should also be noted that the moneyline is more dictated by the action, or the projected action that sportsbooks are expected to get. For example, last fall when Sambo Slice was scheduled to fight Ken Shamrock, the odds favored Slice -400. Shamrock was around +350. Now, anybody with a semi-functional brain could conceive that Slice was a giant tomato can, and a fortune could be had by taking action on Shamrock. But, because there were a TON of fools with a TON of money on Slice, he remained a heavy favorite!
Even though Shamrock was a late scratch, Petruzilli remained a pretty heavy ‘dog, and I still made out pretty schweet on the deal! I expect a similar result with with the Lesnar/Mir fight. Take Mir, heavily.
Anyway, back to your original question, you can go to Intertops http://dagus-statistics.com/intertops and you can choose to view odds in American, fractional, or decimal. It’s kind of a neat feature they have. Check http://dagus-statistics.com for free UFC picks as well as reviews of recommended online sportsbooks. Hope this helps.

-200 means they are the favorite and it means that is how much you must RISK to win 100.00
whatever the MINUS amount is that’s how much you must bet to WIN 100.00 on the favorite -
if you have underdog at +160 that means for every 100.00 you bet on the underdog you WIN 160.00 plus your original 100.00 back!

The answers are good. When you see (-) just think lay to play. Jones -500 you need to put 500 to win 100 dollars so back in your hand is 600. With +300 you put 100 dollars down to win 300 less risk because their the underdog. What you are playing is called the money line I don’t believe it’s a good value because of how much money you have to put on the favorite to get so little back. I like real sports like football with a point spread but hey that’s only my opinion.
